Vegetable muffins.
This evening I have been making vegetable muffins, which taste quite scrumptious.
Here is how I made them in case any of you would like to give it a try!
I grated half a zucchini and two carrots until it looked like this:
Then I added 300 grams of flour (I mixed spelt and whole grain wheat), a teaspoon of cinnamon, two teaspoons of baking soda, a bit of salt and mixed it together with the zucchini and carrots.
Then I chopped a handful of pecan nuts which I added to the mixture.
I also chopped some chives and added them too.
Since I don't eat eggs (if you want to use eggs you're welcome to do so - use two) I used "no egg" as an egg replacer and added to the mixture.
Then I added a spoon of oil, and 2 1/2 dl of water (I was out of soy milk - you're supposed to use milk actually, but water worked just fine!)
I then mixed everything and put the dough into muffin molds (make sure you've applied some oil or butter to the molds before you put the dough in).
Bake for 15 - 20 minutes at 200 degrees celcius, and voila!
The muffins, with hummus on them, make a nice evening meal together with a cup of tea.
